The Alchemist Did It Again!
There is an art to the science of alchemy and, every now and then, a freak happenstance occurs and something new is discovered! This time, it was the discovery/invention of the Sour Mead. During one of our normal brews, some lacto culture got introduced to our signature mead. During our taste-testing, we found that the surprise introduction was… delicious!
And thus, the Sour Mead came into being.
Now, after 2 years of testing in the tap room, we have settled on our favorite selections to distribute through bottle stores. Ch-Ch-Cherry Bomb, Laid Back, TONE LŌKI, and TYPE O will be appearing in select stores throughout Georgia.
Now, our fans can bring home their favorite sour meads in 500 ml bottles.

Ch-Ch-Cherry Bomb
A Sour Mead made with dark sweet cherry, mango, and habanero. Ch-Ch-Cherry Bomb is less sweet with a fruity flavor and a spicy follow. The habenero adds a kick to this mead, making it a fan favorite in the tap room.
Like the song that inspired the name, Ch-Ch-Cherry Bomb is an unabashed, wild Sour Mead ride of flavor!

Laid Back
One of the first sours we produced, Laid Back is an easy sipping mead, less sweet and tangy. The orange, grapefruit and juniper add a summer vibe to the Sour Mead making it ideal for backyard, hot weather, and doing… nothing at all.
If you like a fruitier mead with a little less pucker, this is a great choice. But… relax, it’s cool. Just take it easy.

TONE LŌKI
One of our award-winning sours, TONE LŌKI was inspired by our fan fav Mints of Persia but made with a spearmint tea. It’s light, fresh and spirited. Maybe a little chaotic, but still a treat. Lighter than some of the other Sour Meads, TONE LŌKI is still less sweet than our signatures. Minty fresh!
If you love Mints, but want a drier version, TONE LŌKI is the Sour Mead for you.

TYPE O
Everyone loves TYPE-O. It’s open, approachable and compatible with nearly every person who has tried it. Made with blood orange, TYPE-O is a fruitier Sour Mead with a strong kick of citrus. Less sweet, but full of flavor, TYPE-O goes down easy and pairs well with everything and everybody.

What is a Sour Mead?
Like all meads, Sour Mead starts out simple. Just water, honey, and yeast. Like other meads, the type of honey will make a big difference in the flavor and, for our sour meads, we have chosen to use the same base honey as we do for our show mead, Solifaction. We keep it clean and simple with no added sulfites, producing the best possible off-dry mead. What makes sour mead unique is the introduction of Lactobacillus to the process.
This common culture is all around us and serves as a healthy probioatic. While strains are found throughout food and even our environment, it is very unusual to have it found in mead. Lactobacillus is what adds that tart flavor to common foods, like yogurts or even sour beers.
Sour Meads offer an alternative to fans who want a drier tasting drink, a lot of flavor, and no added preservatives.
